Fruit juice

German: Fruchtsaft Also known as: Saft, 100 % Fruchtsaft

A drink made from the juice of fruit without added sugar, either as not-from-concentrate juice or from concentrate; legally regulated.

Fruit juice is the fermentable but unfermented product obtained from the juice of one or more fruits. Under the German Fruit Juice Ordinance it contains no added sugar; small amounts of lemon juice for flavour adjustment are allowed in certain cases. There are two production methods: not-from-concentrate juice and juice from concentrate.

Natural fruit sugar provides the sweetness. Fruit juice is high in calories and, depending on type, contains vitamins and secondary plant compounds. When called juice, it must consist 100 percent of fruit components. To be distinguished from this are nectar and fruit juice drinks, which have a lower fruit content and may contain sugar or water.
