Natural processing

German: Trockenaufbereitung (natural) Also known as: Natural, Trockene Aufbereitung

A processing method in which whole coffee cherries are dried before the outer layers are removed.

In natural processing, also called dry processing, the cherries dry whole with their pulp in the sun or on drying beds. Only afterwards are the dried pulp and skin removed mechanically. The method saves water and is traditional in regions with little of it.

During drying the beans take up flavour from the fruit. Natural coffees often taste fruitier, sweeter and fuller-bodied, although errors in drying can also cause off-flavours.
