Coffee cherry
German: Kaffeekirsche Also known as: Kaffeefrucht
The fruit of the coffee plant, which usually contains two seeds that later become coffee beans.
The coffee cherry is the red or yellow drupe of the coffee shrub. Beneath the pulp and a thin parchment layer there are usually two seeds lying with their flat sides together: the future coffee beans. The cherries on a shrub do not always ripen at the same time.
For that reason, ripe cherries are either picked selectively or everything is stripped at once. Afterwards the pulp and husks must be removed and the seeds dried. The quality of the harvest clearly influences the flavour later on.
