Moka pot
German: Mokkakanne (Espressokocher) Also known as: Espressokocher, Moka Pot
A stovetop brewer in which steam pressure forces hot water upward through coffee grounds.
The moka pot consists of a lower boiler, a filter basket and an upper chamber. When the boiler is heated with water, the resulting steam pressure forces the water up through the coffee grounds in the basket into the upper chamber. The pressure is considerably lower than in an espresso machine.
The result is a strong, concentrated coffee, but not espresso in the strict sense and without true crema. A medium to fine grind and moderate heat help avoid bitterness and a burnt taste.
