Cold brew
German: Cold Brew Also known as: Kaltaufguss-Kaffee
Coffee steeped in cold or room-temperature water for many hours.
In cold brew, coarsely ground coffee is covered with cold water and typically steeps for many hours, often overnight, in the refrigerator or at room temperature. The coffee is then filtered. A concentrate is often produced, which is diluted with water or milk.
Cold water dissolves fewer acids and bitter compounds, so cold brew is often perceived as mild and slightly sweet. It is not the same as hot-brewed coffee that is cooled afterwards. Because of the long steeping time it should be stored chilled and drunk promptly.
