Dash

Pronunciation: desch Also known as: Spritzer, Dasher

The smallest bar measure: a short squirt, usually from a bitters bottle, of roughly a fifth of a millilitre or a little more.

A dash means a quick shake or squirt of a liquid, usually bitters or a seasoning sauce, from a bottle with a dasher top. The amount is not strictly defined but, depending on the bottle, usually lies around 0.2 to 1 millilitre.

A dash is used where tiny amounts are enough to add aroma or seasoning. For recipes that call for precise amounts, bartenders increasingly give drops or millilitres. The dash differs from the splash by being a much smaller amount.
