Flaming

German: Flamen (Flambieren) Also known as: Flambieren, Flame

A technique in which citrus oil or alcohol is briefly ignited for aroma and visual effect.

In flaming, for example, an orange peel is squeezed over a flame so that the fruit oils briefly flare and caramelise slightly. High-proof alcohol on the surface of a drink can also be ignited. The result is a toasted aroma and a show effect.

Flaming requires care: only sufficiently high-proof alcohol burns, flammable liquids must never be topped up, and guests or decoration must keep enough distance. Burning drinks must only be drunk after the flame has gone out.
