Types of ice in the bar
German: Eisarten in der Bar Also known as: Eisformen, Barwürfel
Different forms of ice such as cubes, crushed ice, large blocks or spheres that determine how a drink is chilled and diluted.
In the bar the shape of ice plays a central role. The larger and more compact the ice, the more slowly it melts and the less it dilutes the drink. Common forms are standard cubes, crushed ice, large cubes or blocks and ice spheres. There is also clear ice, which is frozen without air inclusions.
Each type suits certain drinks: crushed ice for Mojito or Caipirinha, large cubes for whisky on the rocks, standard cubes for shaking. Ice should be fresh, firm and odour-neutral so that it does not distort the drink.
