Strainer

Pronunciation: strei-ner Also known as: Barsieb, Hawthorne, Doppelsieb, Double Strain

A sieve that holds back ice, fruit pulp or herb remnants when a drink is poured out.

A strainer keeps ice and solid parts from reaching the glass. The Hawthorne strainer has a metal spring and fits shakers and mixing glasses. The julep strainer is a spoon-shaped sieve that mostly goes with the mixing glass.

In double straining a fine tea sieve is used as well, to hold back small ice shards and fruit fibres so that the drink sits smooth and clear in the glass. This is particularly common with muddled ingredients or freshly pressed juices.
