Bitters
Pronunciation: bi-ters Also known as: Cocktailbitter, Angostura
Highly concentrated herb and spice extracts added by the drop to cocktails to give depth and seasoning.
Cocktail bitters are strongly aromatic extracts of herbs, roots, barks, spices or citrus peels in alcohol. They are used only in dashes or drops and give drinks seasoning, bitterness and complexity, much like spices in cooking.
Well-known styles are aromatic, orange and chocolate bitters. Classics such as the Old Fashioned or Manhattan are hardly imaginable without bitters. They should not be confused with bitter liqueurs, which are drunk neat or as a main ingredient.
