Shrub
German: Shrub (Drinking Vinegar) Also known as: Drinking Vinegar, Trinkessig
A mix of fruit, sugar and vinegar used as a sweet-sour syrup in drinks or as a refreshment.
A shrub is a syrup of fruit, sugar and vinegar. Fruit is macerated with sugar or cooked and then mixed with vinegar. The result is a sweet-sour concentrate that is diluted with water, soda or spirits.
The technique goes back to preserving fruit before the age of the refrigerator. Today the term is also used for drinking vinegar. In the craft bar it serves as a mocktail base and as a source of acidity for cocktails.
