Twist

Also known as: Zitronenzeste, Zeste, Zitrusspirale

A thin strip of citrus peel that is squeezed over a drink to release its essential oils, then often used as garnish.

A twist is a narrow strip of peel from lemon, orange or grapefruit. It is twisted or squeezed over the drink so that the essential oils reach the surface as a fine mist. Afterwards it is often dropped into the glass as a garnish or run around the rim.

The aim is to take as little of the white pith as possible, since it tastes bitter. A twist adds scent and a fresh note, especially in clear, spirit-forward drinks such as the Martini or Old Fashioned.
