Clarifying

German: Clarifying (Klären) Also known as: Klären, Milk Wash, Milk Punch

A process in which cloudy particles are removed from a drink or juice so that it becomes crystal clear.

Clarifying removes suspended matter from a liquid. In the bar this is done for example with milk (milk punch): added milk curdles through acidity, binds cloudy matter and tannins, and is then strained through a coffee filter. Other methods include agar-agar or centrifuging.

The result is a clear, often milder drink with a softer texture. The milk punch is a historical example that was rediscovered in the craft scene.
