Layering
German: Layern (Schichten) Also known as: Schichten, Float, Layer
A technique in which ingredients of different density are carefully poured on top of each other to form separate visible layers.
When layering, ingredients are added so that they do not mix and form visible layers. This works because liquids with a lot of sugar and less alcohol are heavier than those with less sugar and more alcohol. The heaviest ingredient goes into the glass first.
The next layer is poured slowly over the back of a bar spoon so that it settles gently on top. Layering is used for shots and visually striking drinks. A steady hand and knowledge of the densities are essential.
