Stirring

German: Rühren (Stir) Also known as: Stirren, Stir

A gentle preparation method in which ingredients are chilled and diluted with ice in a mixing glass using a bar spoon, keeping the drink clear.

When stirring, the ingredients are put into a mixing glass with ice and turned evenly with a bar spoon for around twenty to thirty seconds. The drink chills and dilutes in a controlled way but stays clear and silky because hardly any air is introduced.

Stirring is used mainly for drinks made only from spirits or other clear ingredients, such as the Martini, Manhattan or Negroni. Afterwards the drink is strained into a pre-chilled glass.
