Spätlese
Pronunciation: shpäht-lay-ze Also known as: Späte Lese
Prädikat level for wine from late-picked, fully ripe grapes. Usually fuller than Kabinett, and can be dry or sweet.
For Spätlese the grapes are deliberately picked later than the regular harvest, when fully ripe and with more natural sugar and aroma. The required minimum must weight is above that of Kabinett.
The wines are generally fuller and more aromatic. A Spätlese can be made dry, in which case it is usually a robust food companion, or with residual sugar, when it tastes fruity and harmonious. Again, the name speaks only of grape ripeness, not of taste in the glass.
