Ice wine (Eiswein)

German: Eiswein Pronunciation: ays-vain Also known as: Icewine

Sweet wine from frozen grapes picked and pressed at minus 7 degrees or colder. The sugar stays concentrated in the juice.

For ice wine the grapes stay on the vine into winter and must be frozen at picking and pressing, in Germany at minus 7 degrees Celsius or colder. During pressing the ice remains behind and only the highly concentrated, sugar-rich juice runs off.

The result is sweet wine with high acidity and intense fruit. Yields are small and the work is risky because the weather cannot be planned. This makes ice wine a rare and costly speciality. It is one of the Prädikat wines and is bottled in small formats.
