Kabinett

Pronunciation: ka-bi-nett

The lowest Prädikat level in Germany: light wines from ripe grapes, often fresh, with moderate alcohol.

Kabinett is the first level of German Prädikat wines. The grapes are picked at the regular harvest time and reach a prescribed minimum must weight, which varies by region and variety.

Typical are lighter, often delicate wines with lively acidity and rather low to moderate alcohol. With Riesling in particular, Kabinett is regarded as a style combining freshness and elegance. It can be made dry, off-dry or fruity-sweet. The term names only the ripeness level, not the residual sugar.
