Pet-Nat (Pétillant Naturel)

Pronunciation: pe-tiYAH na-tü-REL Also known as: Pet Nat, Pétillant Naturel

Lightly sparkling wine in which the first fermentation is completed in the bottle, without a second fermentation.

For Pétillant Naturel the wine is bottled while the first alcoholic fermentation is still in progress. Fermentation continues in the sealed bottle and the resulting carbon dioxide stays in the wine. No sugar or yeast is added for a second fermentation.

Many Pet-Nats are unfiltered and slightly cloudy, often sealed with a crown cap. Pressure is usually lower than in Sekt. They are often associated with natural wine, although the method is older than that movement.
