Auslese (German Prädikat wine)
German: Auslese Also known as: Auslesewein
German Prädikat level for wine made from fully ripe, hand-selected grapes with higher must weight than Spätlese.
Auslese ranks above Spätlese and below Beerenauslese in the Prädikat ladder. It uses fully ripe, often also botrytised grapes, with unripe or damaged berries sorted out. The minimum must weight required differs by region and grape variety.
Auslese wines can be made dry, off-dry or sweet, so the term describes ripeness and must weight of the grapes, not the taste. Sweet Auslesen are regarded as very age-worthy thanks to their acidity.
