Sherry

Fortified wine from the area around Jerez in Andalusia, aged using the solera system.

Sherry is a fortified wine from the area around Jerez de la Frontera in southern Spain. It is mainly based on the Palomino grape. The base wine is fortified and then aged, with styles ranging from dry Fino to sweet Cream.

The solera system is typical: casks are stacked in tiers and wine from younger tiers is gradually blended with older wine. Fino and Manzanilla age under a layer of yeast (flor), while Oloroso ages oxidatively without it.
