Lambic

Also known as: Lambik

A Belgian beer made by spontaneous fermentation with wild yeasts and bacteria and often matured for years.

Lambic is a traditional beer from Belgium, in the region around Brussels. It is brewed with a high proportion of wheat and fermented not with cultured yeast but by spontaneous fermentation. Wild yeasts and bacteria from the surroundings take over fermentation, and the beer then often matures for a long time in casks.

Lambic tastes tart, dry and complex and is often blended (gueuze) or fermented with fruit such as cherries (kriek).
