Rosé
Pronunciation: ro-ze Also known as: Roséwein, Rosewein
Wine of pink to light red colour made from red grapes where the skins remain in contact with the juice only briefly.
Rosé wine is made from red grapes that stay on the mash only briefly or are pressed directly. This gives a pale to deep pink colour without many tannins coming from the skins. Fermentation then proceeds as with white wine.
In the EU, blending red and white wine to make rosé is generally not permitted, with an exception for rosé sparkling wine. Styles range from dry and mineral, as known from Provence, to fruity-sweet. Served chilled, rosé suits salads, fish and light dishes.
