Fruit brandy
German: Obstbrand Also known as: Obstler, Obstwasser, Kirschwasser, Schnaps
Distillate from fermented fruit without added alcohol or flavouring. Typical examples are Kirschwasser, plum brandy and Obstler.
Fruit brandies are made from fermented mash of fruits such as cherries, plums, pears or raspberries, which are processed whole. The alcohol comes exclusively from the fruit itself; neither alcohol nor flavourings are added. After distillation the spirit is usually stored in glass, stainless steel or stoneware, not wood.
Berries with little sugar of their own are usually not fermented but steeped in alcohol, which produces so-called Geist. Obstler is a spirit from mixed pome and stone fruit. Fruit brandies mostly have at least 37.5 percent ABV. The applicable regulations are decisive.
