Zwickelbier

Also known as: Zwickl

Naturally cloudy, unfiltered beer drawn straight from the sampling tap (Zwickel) of the maturation tank, with gentle carbonation.

The name Zwickelbier comes from the Zwickel, a small sampling tap on the storage tank that brewers use to check how far the beer has matured. The beer drawn there is unfiltered and still contains yeast. From this a style of its own developed that is very close to Kellerbier.

Zwickelbier is naturally cloudy, has soft carbonation and a fresh, slightly yeasty taste with rounded maltiness. It is usually a bottom-fermented, often pale beer of regular strength. As it is not filtered and often not pasteurised, it is more sensitive to heat and light and should be drunk cool and soon. There is no binding definition, and the line to Kellerbier is blurred.
