Tea grades
German: Teegrade (Blattgrade) Also known as: Orange Pekoe, Broken, Fannings
Trade terms such as Orange Pekoe or Broken that describe leaf size and shape of tea.
Especially for black tea, leaves are sorted by size after processing. The trade grades range from whole leaves through broken leaves (broken) to small fragments (fannings) and dust. Abbreviations such as OP, BOP or FOP reflect this classification.
The terms describe leaf shape, not automatically quality. Small leaf pieces release their compounds faster and give stronger, quicker infusions, as used in tea bags. Systems vary by producing country.
