Maturation

German: Reifung und Lagerung Also known as: Reifung, Lagerung, Lagern

The time after production in which a drink rests and its aromas, structure and harmony develop.

Maturation is the phase in which a drink rests after fermentation or distillation and changes. Aromas combine, harsh tones soften, tannins become rounder. It can take place in a tank, cask or bottle and lasts from weeks to decades.

Temperature, light, humidity and calm are important. Temperatures that are too warm or fluctuating, and light, do harm. Not every drink benefits from age: many beers, juices and simple wines are meant to be drunk young. Storage with the retailer and at home also affects quality, so cool, dark places are best.
