Stainless steel tank
German: Edelstahltank Also known as: Tank, Stahltank, Gärtank
A closed stainless steel vessel for fermentation and storage that is neutral and easy to clean and cool.
Stainless steel tanks are vessels in which drinks are fermented, stored or blended. Stainless steel is flavour-neutral, easy to clean and tight, and allows exact temperature control through cooling jackets. Fruit and freshness are preserved because hardly any oxygen and no wood aroma are added.
This is why tanks are now standard for fresh white wines, beers, juices and intermediate storage. Sizes range from a few litres to many thousands of hectolitres. Unlike a wooden cask, the tank hardly changes the character of the drink; it rather preserves it.
