Centrifugation

German: Zentrifugieren (Separieren) Also known as: Separieren, Zentrifuge

Separating solids from liquid by rapid rotation to remove sediment, yeast or pulp.

In centrifugation, also called separating, the drink is treated in a rapidly rotating drum. Centrifugal force throws heavier particles such as yeast, sediment or pulp outwards while the clear liquid is drawn off.

The process is faster than letting the drink settle and gentler than some filters. It is used for beer, juices, wine and milk-based drinks before filtration to relieve the filter. It affects aromas only little as long as oxygen pick-up is avoided. The equipment is expensive and therefore found mainly in larger plants.
