Mezcal
Pronunciation: mes-kal Also known as: Mescal
Mexican agave spirit from various agave species whose hearts are usually cooked in earth pits, which often gives a smoky taste.
Mezcal is the umbrella term for Mexican spirits from agave, of which tequila is a special form. It may be made from many agave species and comes above all from the state of Oaxaca. The origin is protected.
Traditionally the agave hearts are cooked in earth pits over hot stones, which gives the spirit its typical smoky aroma. Crushing, fermentation and distillation follow. Craft mezcal is often distilled in clay pots. It is gladly drunk neat from small glasses, often served with orange slices and salt.
