Kölsch
A pale, top-fermented, filtered beer from Cologne with mild hop and fruit character; protected as a designation of origin.
Kölsch is a pale, clear, top-fermented beer from Cologne and its surroundings. It is fermented at cool temperatures and then stored cold, resulting in a clean, delicately fruity taste. Hop bitterness is subtle, and alcohol content is usually about 4.8 percent ABV.
The name is protected as a geographical indication, and a convention among Cologne breweries sets requirements. Kölsch is traditionally served in slim cylindrical glasses called Stangen, holding 0.2 litres, and refilled by the Köbes (waiter) in brew houses until a coaster is placed on the glass. It is related to the Alt from Düsseldorf, but paler and milder.
