Draught beer

German: Fassbier Also known as: Zapfbier, Bier vom Fass, Keg

Beer filled in kegs and served through a tap system; fresh with fine foam.

Draught beer is beer filled not into bottles or cans but into kegs and served through a dispensing system. Often these are stainless steel kegs of 20, 30 or 50 litres pressurised with carbon dioxide or a gas mixture.

When properly poured it forms a fine-pored head that protects the beer from oxygen. For good quality, clean lines, the right temperature and correct pressure are essential. The keg should be stored cool and emptied soon after tapping. Besides kegs for hospitality, small party kegs for home use exist, some with pressure regulator or their own tap system.
