Winemaking maturation (élevage)

German: Ausbau

Maturation and care of wine in the cellar between fermentation and bottling, in tank or wooden cask.

Ausbau (élevage) is the period between fermentation and bottling in which the wine matures in the cellar. It takes place in stainless steel tank, large wooden cask, barrique or also in concrete and amphorae. The wine clarifies and aromas and structure develop.

The choice of vessel shapes the style: stainless steel preserves freshness and fruit, wood contributes tannins and toasty notes and permits slow oxygen uptake. The wine is often left on its fine lees.
