Head
German: Schaumkrone Also known as: Schaum, Blume (Bier)
The foam on a freshly poured drink, especially beer; it affects appearance, aroma and mouthfeel.
The head is the layer of foam that forms when beer or other carbonated drinks are poured. It arises from released carbon dioxide and surface-active substances such as proteins and hop compounds. Its firmness, fine texture and persistence are regarded as quality features.
The head protects the drink from oxygen, holds back aromas and contributes to a soft mouthfeel. A clean, grease-free glass and the right pouring technique are decisive. If the foam is missing or collapses quickly, this often points to dirty glasses, wrong temperature or age.
