Bouquet

German: Bouquet (Blume) Pronunciation: bu-ke Also known as: Blume, Duftbild

The sum of the scent notes of a matured drink, especially wine; often combining fruit, fermentation and ageing aromas.

The bouquet, in wine language also called the bloom, is the sum of all scent notes of a drink. It comprises primary aromas from the grape variety, secondary aromas from fermentation and tertiary aromas from maturation and storage, such as honey, leather, nuts or forest floor.

Often a distinction is made between aroma (fresh, fruity notes) and bouquet (complex, matured notes), though in everyday use the terms are also treated as the same. An open, multi-layered bouquet is seen as a sign of quality and maturity. Swirling the glass helps it to unfold.
