Palate

German: Gaumen Also known as: Geschmack, Mundeindruck

The taste impression of a drink in the mouth, including sweetness, acidity, bitterness, body and mouthfeel.

Palate describes in tasting everything perceived in the mouth: the basic tastes sweet, sour, salty, bitter and umami, but also texture, body, carbonation and warmth. To this is added retronasal perception, in which aromas rise from the mouth to the nose.

The assessment covers whether the drink is balanced, how intense it feels and how it develops over time: beginning, middle and end. A sip is moved briefly in the mouth so that all areas are reached. The palate ends with the finish.
