Disgorgement

German: Degorgieren Also known as: Degorgement

Removal of the yeast deposit from the bottle in sparkling wine made by traditional bottle fermentation.

During disgorgement the yeast deposit is removed from the bottle. After riddling the yeast lies in the bottle neck; the neck is frozen or the closure is opened, and the pressure expels the yeast plug. The word means to spit out.

Afterwards the bottle is topped up with the shipping dosage and closed with the final cork. The disgorgement date may be stated on the label.
